Ooooooh mannnnnn,this is one of those recipes that really doesn’t look all too pretty, but holy s*** does it taste pretty. Pretty darn incredible, that is! Like I’m kind of freaking out a bit about the balsamic onion mixture. It’s seriously one of the best things I’ve ever concocted! And that’s saying a lot because I really like a lot of things that I’ve cooked in the past. I’m officially obsessed and am determined to create several recipes using these onions!

But for now, let’s talk about how amazing it is over some seared chicken breasts and topped with a big, old handful of shredded Swiss cheese melted right over the top. I’m actually currently drooling just thinking about how delicious it was. And now I need to go make it again asap! It does take a little more time to put together than most of my super simple recipes, but trust me when I say that it’s time well spent! The trick is really letting the onions slowly cook down so that they literally get to the point where they are just melt in your mouth tender. And as if they didn’t taste delicious enough on their own, the addition of just a small amount of balsamic vinegar literally elevates the flavors in this dish soooooo much!
